What started as a passion project for Chef Mark Estee Back in 2000 has now become a USDA inspected artisan butcher shop that started producing in 2014. The facility, located at Liberty Food and Wine Exchange in downtown Reno, focuses on whole animal butchery and can produce a wide range classic charcuterie, sausages, cured meats and salumi.
